Healthy Eating

So in between all of the websites and photos, we’ve found room to change our eating and started exercising. One of the reasons we got decided to get a dog was to encourage us to get outside more – seems that we are always locked away in our office working on some project!

So far we have made our own bread (our sweet friend gave us a bread maker – thanks Megan!), made our own black beans (they freeze really well – never knew that!), made black bean burgers, picked strawberries and prepped for freezing for our morning smoothies, and made smoothies every morning after a 30 minute speed walk complete with weights.

I feel amazing and I love the fact we know what we are eating! It’s great to have a pride in what you make for your family. I hope to post the recipes I find healthy and successful!

Here’s one to start us off – these are soooo good! I made some adjustments to the recipe I found here.

Homemade Black Bean Burgers

Ingredients:

Preparation:

Sautee the onions till soft, about 3-5 minutes. Preheat the oven at 400F.

In a large bowl, mash the beans until almost smooth. Add sauteed onions and the rest of the ingredients, except the oil, adding the flour a few tablespoons at a time to combine well. Mixture will be thick.

Form bean mixture into patties, approximately ½ inch thick. Put a small amount of olive oil on a cookie sheet and place in oven – after 15 minutes flip and let cook for another 8-10 minutes. Should be slightly firm. Add avecado, tomato and hearts of romaine and enjoy!

 

The next batch, I’m going to try to add quinoa to use less flour. I’ll let you know how it goes!
